What's for Dinner???

Well....I was hoping my faithful readers could help me out with this seemingly common dilemma these days in my house. I go to make dinner and realize I've either forgotten to go to the store, I'm missing the "it" ingredient, or I just don't feel like slaving over a hot stove in the dead heat of summer. So here's where you can help. I need cheap, easy, kid-friendly dinner ideas that don't consist of frozen chicken nuggets or spagettio's!! Now that a little more of my energy is returning (and by little I mean precious little) I feel up for the task of making a real dinner again. Do you gals (or guys for that matter) have any tried-and-true dinner ideas that have worked for you and your families?? And it doesn't have to be fancy, smancy either!! My brain has been overcome by the infamous "pregnancy fog" and coming up with a weekly dinner plan/shopping list, has become next to impossible!! Can't wait to see what yummy ideas you guys have!!

alfredo, oat pancakes, quevoses rancheros, omlets, or falafal and hummus are all easy things to make that are good.

Skewered shrimp on the BBQ with rice and veggies

anything in the crock pot

pancakes/waffles with fruit

marinaded pork medallions on the bbq

veggies you can roast - so easy..

meatballs (ground turkey) and rice

ww spaghetti & sauce

easy chicken pot pie

veggie lasagna

stir fry

big salads

salsa chicken and couscous

Tacos, Pizza(homemade with frozen dough ball)and a great new one we just tried:
Pull the meat off a rotisserie chicken, boil 3 cups orrechiete pasta, save 1 1/4 cups pasta water, 3/4 fresh parmesan cheese, 2T fresh rosemary, 1/2 t salt and pepper. Combine pasta, chicken, water and seasonings. Cook on low 2 minutes. Serve with bit more parm. Soooo good.

Take that chicken and improvise with it... make ceaser or ranch wraps with veggies dressing lettuce cheese... or make quesideas...(I just butchered the spelling of that but yea you know what I mean.. I hope) its salsa, chicken cheese in a wrap folded over and toasted or grilled... yummy :D...

things that take a little more time would be spinach calzones, spinach lasagna, tofu taco salads (or regular taco salads if you eat meat), cheese enchiladas (or meat), tofu curry (or chicken), crepes...with any fruit

i have recipes for all these things if you want them

I don't know how your boys are with veggies, but mine always love a good soup. I chop whatever veggies I feel like, put in the broth (tomato juice tastes great, too), and let it come to a boil then simmer for a while. This is super easy if you are using frozen or canned veggies. And you can always add chicken, pork, ground beef if you like. I have a great vegetarian recipe for minestrone that uses garbanzo beans (you really could use kidney, northern or any other bean). You can top with shredded cheese if you like. The options for a great veggie soup are endless. The only thing you have to do is chop some veggies, or open the can/bag. Let me know if you would like a few recipes.

Cheesy Chicken Casserole
2 Cans Cream of Chicken Soup
1 Can Cheese Soup
1 Soup Can full of Milk (using one of the empty cans)
2 Cups Minute Rice
Optional Items:
1 Large Can Chunk Chicken
1 Cup Broccoli pieces (frozen or fresh)

Mix all items in Microwaveable dish and cook for 15 minutes or until rice is tender. You can also cook it on the stove top. :)

Mac & Cheese

1 lb. Macaroni Large Elbows
6 oz. Velveeta Cheese
3 oz. Cream Cheese
1/4-1/2 Cup Milk

In a large pot bring water to a boil, salt water till it tastes like salty sea water. :) Once at a rolling boil cook macaroni to an aldente stage.

In a large sauce pan at a low heat melt down the velveeta and cream cheese. Once melted add milk to desired creaminess. Add aldente cooked macaroni noodles and serve warm. Watch the cheese sauce as it burns easily.
